Slow Cooker Bourbon BBQ Chicken

Given that my last recipe of Korean beef tacos was a hit, I’m posting another favorite slow cooker recipe: bourbon BBQ chicken. This recipe is a total crowd pleaser but is super simple with only 6-7 ingredients and very minimal work involved. Serve this BBQ chicken with my apple and jalapeno slaw and you have a meal that’s sure to be a hit!

The best part about this dish? You can prepare the BBQ chicken and the slaw in the morning, and then get on your day. The chicken will cook in the crockpot all day and the slaw can sit in the fridge until ready to eat. Of course, if you are short on time, you can cook on high instead of low and the chicken and slaw can be ready in 3 hours instead.

This slow cooker bourbon BBQ chicken recipe is so incredibly easy. All it takes is mixing the sauce and cooking the chicken in a crock pot (6-quart crock pot is best).

To get started – mix together the following ingredients in a bowl:

  • An entire 16-18oz bottle of barbecue sauce (I’m a fan of Sweet Baby Ray’s original BBQ sauce)
  • ½ cup of Italian salad dressing
  • 2 tbsp brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp paprika
  • ¼ cup bourbon (optional)

Place 6 skinless, boneless chicken breast halves in a slow cooker. Surprisingly, I’ve found frozen chicken tends to yield the juiciest results, but I’ve used fresh chicken breasts with good results as well. Pour the sauce over the chicken.

Cover the slow cooker, and cook 6-8 hours on low or 2-4 hours on high. About 30 minutes to 1 hour before the time is up, shred the chicken breasts with 2 forks. Let the chicken continue to cook so the shredded meat has time to absorb all of the sauce.

And that’s it! Once the cooking time is up, the chicken is ready to eat. You’ll have moist, delicious, saucy BBQ chicken that is sure to please any group.

Serve this BBQ chicken on hamburger or slider buns as is or alongside this apple and jalapeno slaw. I highly recommend the slaw accompaniment since it provides the perfect tang and crunch to counterbalance the sweet, moist shredded chicken. Don’t forget the napkins!

Ingredients

  • 6 frozen skinless, boneless chicken breast halves
  • 1 (16-18 ounce) bottle barbeque sauce
  • 1/2 cup Italian salad dressing
  • 2 tbsp brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tbsp paprika
  • 1/4 cup bourbon (optional)

Instructions

In a bowl, mix the barbecue sauce, Italian salad dressing, brown sugar, Worcestershire sauce, paprika, and bourbon (if using).

Place the chicken at the bottom of the slow cooker. Pour the sauce over the chicken.

Cover the slow cooker. Cook 6 to 8 hours on low or 3 to 4 hours on high.

About 30 minutes-1 hour before the cooking time is done, shred the chicken with 2 forks. Allow chicken to sit to finish cooking.

Serve alongside hamburger buns and enjoy!
